The 31-year-old has made more than 350 appearances for the Suffolk outfit.
Dunbar returned to Leiston in May 2021.
He began his career with home-town club Ipswich Town.
He progressed through the ranks to become a regular for the Tractor Boys` under-18s but was released in January 2011 and joined Isthmian League North side Maldon & Tiptree soon afterwards.
In the summer of 2011, he stepped up to join then-Vanarama National League North side Bishop`s Stortford.
After a season at Woodside Park, he joined Leiston but after one campaign at Victory Road, he signed for then-Isthmian Premier outfit Bury Town.
He re-joined the Blues in July 2017 after playing at Ram Meadow for three seasons.
In the summer of 2019, after two years back at Leiston, Dunbar moved onto ambitious Stowmarket Town and was never on the losing side during his time at Greens Meadow. However, having seen the Old Gold & Black`s progression halted by the Covid-19, he opted to find himself a fresh challenge back at his former club.
Director of football Dave Williams told his club’s website: “We’re delighted to have Seb back on board.
“He’s been a great servant for the club already, he’s our captain, so to secure his services is a big step for us next season.
“He had other offers, he’s been very open with us about it, but he’s also been very open he has no desire to leave the club. Leiston is his club. He is a leader on the pitch and very influential off it”.
