The 25-year-old joins the Martyrs from former league rivals Weston-super-Mare.
He had moved to Weston in February 2023 from then-Southern Premier Division South rivals Tiverton Town and helped the Seagulls to win promotion to the Vanarama National League South as champions.
He had signed for Tiverton in October 2022 from another league rival, Yate Town, where he played under current Merthyr manager Paul Michael.
He had arrived at Lodge Road in July 2018 after being released by Forest Green Rovers at the end of the previous season.
He was a scholar at Blackburn Rovers before joining Bristol Rovers and has previously appeared on loan for a variety of non-League clubs including Mangotsfield United, Cirencester Town, Bideford, Salisbury, Evesham United, Taunton Town and Dorchester Town.
The son of former professional David Mehew, he moved to Southern Division One South side Bristol Manor Farm in late November 2019 but then returned to Yate in the summer of 2020.
Paul Michael told his club’s website: “I’ve obviously worked with Olly before at Yate and I’m a huge admirer of him.
“Last season out of respect for Yate we initially only approached the Welsh lads but obviously Olly’s gone on to Weston at the back end of the season, scored some important goals, played an impressive role in their success and now it’s about getting the best team possible on the pitch for Merthyr Town.
“This summer we wanted to add players who can improve us and I believe with Tom Hillman and now Olly we are doing that.
“The supporters can look forward to his electric pace, he can beat players inside or outside and he wants to get in behind, there was a goal he scored for Weston where he played as a number 9 against Dorchester Town, as soon as he got it to feet he dropped it off first time so he could get in behind. We need to stretch teams in behind more rather than playing in front of them and Olly can do that from any of the front four positions”.
